  • 1 slice of whole-grain bread
  • ½ ripe avocado
  • 1 large egg
  • 1 tsp vinegar (for poaching the egg)
  • Salt and pepper to taste
  • Chili flakes (optional)
  • Fresh herbs for garnish (optional)

Instructions
 

  • Toast the Bread: Toast the whole-grain bread until it’s crispy and golden brown.
  • Prepare the Avocado: While the bread is toasting, mash the avocado in a bowl with a fork. Add a pinch of salt and pepper, then set aside.
  • Poach the Egg: Fill a small saucepan with water and bring it to a gentle simmer. Add the vinegar to the water. Crack the egg into a small bowl, then gently slide the egg into the simmering water. Cook for 3-4 minutes until the whites are set, but the yolk is still runny.
  • Assemble the Toast: Spread the mashed avocado evenly over the toast. Use a slotted spoon to lift the poached egg from the water and place it on top of the avocado.
  • Season and Serve: Sprinkle the toast with salt, pepper, and optional chili flakes or herbs. Serve immediately.

Notes

  • You can add other toppings like smoked salmon, feta cheese, or cherry tomatoes for extra flavor and nutrients.
