Ingredients
  

  • 1 cup dry lentils green, brown, or red
  • 1 medium onion chopped
  • 2 carrots diced
  • 2 celery stalks chopped
  • 3 garlic cloves minced
  • 1 tablespoon olive oil
  • 4 cups low-sodium vegetable broth
  • 1 can 14.5 oz diced tomatoes, no added sugar
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish optional
  • 1 tablespoon lemon juice optional

Instructions
 

  • Prepare the lentils: Rinse the lentils under cold water and set them aside.
  • Sauté the vegetables: In a large pot, heat olive oil over medium heat. Add chopped onion, garlic, carrots, and celery. Cook for 5-7 minutes until the vegetables are softened.
  • Add spices: Stir in cumin and turmeric, allowing the spices to blend with the vegetables.
  • Simmer the soup: Add lentils, diced tomatoes, and vegetable broth to the pot. Bring the mixture to a boil, then reduce heat and let it simmer for 25-30 minutes until lentils are tender.
  • Season: Add salt, pepper, and lemon juice (if using). Taste and adjust seasoning as needed.
  • Serve: Ladle the soup into bowls and garnish with fresh parsley or cilantro, if desired.

Notes

  • You can add additional vegetables like spinach, kale, or zucchini to increase the nutritional value of the soup.
  • If you prefer a creamier texture, use an immersion blender to blend part of the soup.
